Culinary highlight not to be missed
Lombok is one of the archipelago’s best kept secret, filled with tradition, culture, breathtaking natural beauty and one should not miss the opportunity to indulge in its culinary offerings.
The one dish which one must not miss while on the island is “Ayam Taliwang”. Ayam in the local language literally means chicken, meanwhile Taliwang is the name of the place where the dish came from.
The ingredients consist of red dried chili powder, onions garlics tomato, brown sugar and many more. To get a perfect taste of Ayam Taliwang, the chicken will be grilled halfway. It is then removed from the grill and tenderized with a pestle. The chicken is then dipped for few seconds in cooking oil. The sauce which was made of garlic chili and shrimp paste is then rubbed around the chicken before the chicken is grilled or fried for the one last time.
Ayam taliwang is best served with steamed rice accompanied with another Lombok highlight, Plecing Kangkung (spicy water spinach salad). All those combined will be the perfect dinner and you will be sure to ask for more!
